What a wonderful week. What a special experience. What an extremely talented group of people. I feel like all the worlds problems could have been solved by the 40+ people gathered at Rachel Ashwell's The Praire for The Bloggers Luncheon. Far removed as it was from the fast paced life most of us live, it was like a walk into the past with a real forward thinking leader.

To cover this event will take several entries. Everyone deserves their special time in the spotlight. It took four different groups to bring this event to fruition. Of course the one and only, Rachel Ashwell, Bud "The Pieman" of Royer's Cafe fame, Kelley Copeland of The Hidden List, and Dwell with Dignity's Kim Turner and Lisa Robison. Each of these incredible spokes in the wheel drove us down a very special trail to The Praire.

Rachel is the quintessential hostess. She has surrounded herself with top notch people who make everything look effortless. "A gracious woman with an ease about her that makes you feel so relaxed" is a great way to describe what it is like to spend time with her. She doesn't mind telling you that "she's had her trying times that everyone knows about", "that she cried from stress AND had a wagonwheel chandelier", "that she has no formal training and just used her own personal love and passion for design." (She had to dress up the deer to make him fit in!)

After our fabulous lunch provided by Royer's Cafe and Bud (more to come on this later) we moved on to tour Lilliput Lodge with Rachel. Many more great stories were told of her and her team living in the Lilliput while staying at The Prairie. Most of these pictures were taken by my niece, Kate Ragon of Jaxon Ivy, a repurposed lifestyle store, in Fredericksburg, TX.

It's nice to lighten up and enjoy what's fresh. However, I have a staple at the Lazy T that is good anytime of the year. So I am going to share my favorite granola recipe. It is so easy to make and change to suit your taste or allergies. It makes a good snack, too.

Makes 6 1/2 cups, serves 12 (not at my table)

3 c. old-fashioned oats
1 c. slivered almonds
1/2 c. coconut
1/3 c. honey
1/4 c. canola oil
1 c. dried cranberries
1.2 c. dried banana chips

Preheat oven to 325 degrees

Stir together oats, almonds, coconut, honey and oil in a large bowl.

Spreak in a rimmed baking pan and bake until oats are golden (about 30 minutes). Stir often to prevent sticking.

Remove from oven, let cool, then stir in cranberries and banana chips. Store in airtight container after completely cooled.

Substitute the fruit or nuts to taste or for variety.

Enjoy!

A home cooked meal, a comfy bed with great linens, bright stars and brilliant sunsets, peace and quiet, or exhilarating conversation. It's pretty simple. No themes and gadgets; no silly names and come-ons. Life at the Lazy T is simple and sensible. Life in Fredericksburg is the same way. I ran a few errands the other day and when I came home my average MPH per my car was 20!
Baking brownies, coffee cakes, and pouring wine for new found friends is a great way to live. It's like throwing a party many days a week. Someone asked me if I had made any friends in FBG, I answered yes, at least 10 a weekend. My world expands greatly guest by guest.

The Need to Keep Up

Well, it has been pointed out to me in no uncertain terms that I am behind on my blog even though I Tweet, FB, cook, clean, worked on design of new cards, rack cards and now website. And by the way the Lazy T is having a record third year. Now I am a full time resident of the Lazy T which means I completed the move from my home of 25 years. So I am proud to say that I will attempt to keep up. I really think my guests come first, but some people prefer to push that you are all things to all people.

It's Spring in Texas and the drought is really bad. Mowing will be a minimum but watering will be required entertainment. With gas reaching record highs travel is well thought out. The world is in turmoil and earthquakes won't stop. I am sure I could think of more bad things, but I choose not to.

I choose to keep on keeping on. People continue to need to get away from all the daily life issues that make their lives hard. It is my job to see that they have the best value experience for their hard earned money. There are more goodies and bigger breakfasts at the Lazy T. There are more shared experiences and shared sunsets at the Lazy T. There are more morning laughs, more music, and more star gazing at the Lazy T. There is more of a drive for me to "Keep Up" at the Lazy T. For you see, the guests who come as strangers and leave as friends are my reason to be at the Lazy T.

The Need to Satisfy

Being in the B and B business allows for all kinds of interest. They all revolve around service but can be many things. As the Innkeeper I get to do all the things I love to do, all the things I like to do, all the things I will do, and all the things I have to do. The good news is it is a sliding scale that goes from large loves to small have to dos. Number one love has to be the "need to satisfy." "Satisfy" can take on many directions in a B&B. Today I want to focus on satisfying the love of a great breakfast and a morning that can set the tone for a great day.

When I book a reservation one of the first questions I ask is "Do you have any food allergies?" Most people are taken aback by this. Some people have even written in reviews about the fact that I ask this question. I am not a full service restaurant, but I do aim to please--back to "satisfy". I have run into many different answers to this question. Some people are gluten free, some allergic to eggs, strawberries, bananas, nuts, etc. You know what? It's really not that hard to work around these issues. After having dealt with all the allergies there are many other questions. You know what? We all don't drink 4-5 cups of coffee every morning any more, however, SOME of us do. Some of us have had 3 cups before we come to breakfast. So asking, "Do you want coffee at Breakfast?" is a very important question. Oh, and then there is the question, "Are you coming to breakfast?" Funny, but there are a few people who book at a B&B and never mean to come to breakfast. So do you get how we get into "The need to satisfy?"

Now, my latest discovery in satisfying my guests. When you ask about the allergies they all say "no". Then you prepare the most beautiful gourmet breakfast and set it down in front of them and they say, "the only two things I don't eat are bananas and pecans." This is right after a beautiful presentation of my Bananas Foster French Toast. This has nothing to do with allergies, it has to do with "I don't like." Another "I don't like" can often be eggs. Therefore, I always have on hand my wonderful homemade Granola and a variety of fruit. That doesn't mean they don't like your thyme potatoes though. So just remember you are there to satisfy. Satisfy an allergy, satisfy a want, and satisfy a need. The glory of the need to satisfy for any and all.

The "R" word--Resolutions

Ok, I was reminded today that I have not blogged in a month. Some how a full house all through the holidays took on a life of its' own. Lots of food, fun, delightful guests who are now new friends, and many bottles of wine. Decorations up--decorations down.....the Charlie Brown tree was loved by all.

So now I must discuss the "r" word. I don't make resolutions except for the one that has to do with running the Lazy T. I am pouring my heart and soul into 2011 to make this the best year. The Lazy T has only been open for 2 years and 3 months. The first 9 months don't really count because I wasn't on site full time to make it happen. However, 2010 was a good year despite the economy. This year I have a list of improvements to make every guests' experience better than ever before. I resolve that the Great Hall will get a big upgrade through HVAC improvements, furniture additions, and a kitchen upgrade. That is all a big challenge but WILL be accomplished. Outside there will be the additions of a large fountain, more landscaping and improved lighting. The BIG excitement for me is going to be the addition of a garden filled with herbs, tomatoes, garlic, and all things that I can use in the making of my Texas sized breakfasts. Of course this fabulous garden will have to be Deer fenced so we get to enjoy it and not them. AND in front of the garden will be the addition of a sunset watching patio! I am really excited about this. So you can see I have set a lot of goals for myself this year, and they are all goals to create a more pleasurable experience for you at the Lazy T. This just sounds delicious. I think I will make it next weekend at the Lazy T. This would be a great recipe to use up leftovers after a long holiday weekend. You could certainly adjust the meats according to what you have on hand.

Right now I am cooking Chicken Gumbo. This is really backwards in my family traditions. My traditions have seemed to fly out the window over the last several years. My dad died 10 years ago and my mom died 6 years ago. They were the glue in our family. Everything revolved around them, their house, and my mom's cooking. Actually, the gumbo comes from even further back than that. All my life before my grandparents died we went to Pt. Neches, Tx. for every Thanksgiving. Gumbo was on Wednesday night done at my MawMaw's (Dad's mom) and her family. Then Thanksgiving day was at Nanny's (Mom's mom) and all that family. Sunday was always traveling day to home listening to Christmas music on the radio with my mother singing every word.

Been trying to make new traditions for the last six years. Every year has been different--different people, different places, different days, and different food. We even made Mexican food for Christmas one year because everyone had already had 3 turkey dinners with different family groups. Now things are really about to change. I am moving to the beautiful Texas Hill Country in Fredericksburg to run the Lazy T full time. So maybe now it will be easier to start new traditions, since it is totally different. We have tried very hard to keep things the same. Sometimes in life you just can't recreate a stage of your life when you are in a new stage of life. Actually, it is kind of exciting.

This is gorgeous photography. Just had to share my new find.

Wow, it is busy season at the Lazy T. We have been blessed with wonderful weather for weeks. I went to Wildseed Farm on Saturday and bought tons of new wildflower seed to plant. Looking for a day before rain to put them out. Will have to put them out by Sunday any way. Just an FYI the sweet lady at WSF told me to mix five parts sand with one part seed to throw them out. She also said if you start watering them you have to keep at it. So her advice was let nature take it's course. It worked last year. I need to find out what they are predicting for this winter.

We have been blessed with the most gracious and fun guests. I went to Trade Days this last Sunday and met some folks I have found on FB and Twitter. It pays to get the word out. Oh, Sister, Sister shows in their new Pink Cottage in FBG and also at Canton. They have a FB page with information about their shows. They have beautiful all lined clothing in great colors. Also, the all cotton gowns are so pretty and comfortable. Check them out and then call 325-446-3906 or ohsistersister@aol.com.

What a cool article. Thank you FBG CVB for tweeting this. Good way to spread the word. If I could have been the writer of this article I would agree with 4 out of 5 of her picks. However, I love Fredericksburg being in the 5 of all the world! We have had several ladies groups book our Great House and have others lined up. I had a group of girls (ladies of 39 yrs,) that I had taught in the fourth grade. What a party that was! We have had several pre-wedding shopping tours with the Bride and the Bridesmaids. Also, several mothers, daughters, sisters, freinds, family of the wedding parties and all other combinations. Check us out and then you can write and article just like this one of your world travels including Fredericksburg, TX, and the Lazy T B and B.

Best Stores in Texas 2011

Totally cool......6 stores in Fredericksburg, the jewel in the Hill Country, have been voted best stores in Texas for 2011. "And on the other hand" as Randy Travis would say McKinney, my home town, has one store "Pumps". Way to go. You will always hold my heart.

I have been to most of the stores on the Fredericksburg list but will make them all by the end of this weekend. Can't wait to go to Red and congratulate all of them. Homestead I have been to many times as well. I always take guests there to show them the building for sure. Really cool, old, old, antiques from all over the world await you. House Wine is a favorite of my son and his girlfriend. I will stop by and have something special before strolling on down the street. Root is a wonderful, contemporary upbeat store. I haven't been to Beulah's but I now have a reason--a new baby girl cousin, Ava Grace. Beulah's sounds like the perfect place to go and find that special gift. And Something Different II is the perfect expression of me...country chic, modern, antique, and just love it all! Come on down and enjoy the uniqueness of Fredericksburg when you want award winning shopping, dining, wineries, and hospitality. We have it all.....and more, now that I think about it. Gotta go--there's a spectacular sunset on the way followed by the show presented by the Milky Way.

This is a great opinion article about the wine country surrounding Fredericksburg. I think it is spot on about the moving to more upscale restaurants and wine lists. Sorry they obviously didn't visit the Cabernet Grill where the food is superb and the wine list is very good. Also, they have a very well educated wait staff. Wait staff can be a bit of a problem in FBG as the unemployment rate is extremely low, usually around 3-3.5%. They were all the way up to 4.5% the first of this year. Above all it was great to see the exposure of Fredericksburg and the Texas Hill Country in another national magazine. The founders of Fredericksburg have allowed the growth, even though it is heavily managed growth. There is great opportunity for the continued growth and keeping that small town feel.

All you need to know to make your October plans. Sooo many great events in the Texas Hill Country, the Texas Wine Trail, and Fredericksburg, TX, especially. This link will take you to all the special information that you need. It has been a spectacular year for wild flowers, peaches, and wine in the hill country. God blessed us with plenty of rain at the right time but now August is looking to be the hottest since 1957 in the Austin area. Glad we are at 2,000 feet.

Breakfast this morning included the peaches, apples, organic cherry tomatoes and basil I found at the Farmer's Market yesterday at Marketplatz. The weather was spectacular, however, there were fewer vendors. Those present told me it was the back to school week and the 122nd Gillespie Country Fair that kept them busy this week. Our Lazy T guests enjoyed their coffee this morning outside after one taking his 3 mile walk and one on a photo-walk. The ladies chose to sit after breakfast in the screen house in the rocking chairs. The 22 year old son chose to go back to bed....ah, the pleasure of youth. After everyone shopped downtown they were off to the scene of the wedding tomorrow. Five sisters, one Dad and one Mom, what a blessing. Three sisters and the parents from California, one sister from here, the bride from here, and one best friend from Brian/College Station. It is just one big three day celebration. I will be going to the wedding tomorrow afternoon (they all insisted) and hope to share some pictures with you. The bride and groom are 13 miles further west into the Hill Country from the Lazy T. Just more beautiful scenery on the way, many low water crossings with flood level indicators on the side. I keep having to remind the guests to watch for deer on the way home. The soon to be newlyweds have built THE party barn. I want to build it to be my house! I will keep you posted. Just one more beautiful weekend at the Lazy T.

My ultimate goal is to have a garden at the Lazy T and use our home grown produce in our breakfast menus and evening appetizers. Of course this not only entails having a garden, but it must be High Fenced to survive!!! That little extra slows me down some. Hopefully over this Fall I will accomplish this task. What a wonderful find. This looks to be an interesting place. I will be ordering and letting you know what I think. However, I have been to Pt. S Reyes Station and all of the Bolinas area so my thoughts and memories are pouring into what this cheese could be like. It was one of the most glorious places I have every been. All along the peninsula is nothing but beauty and peace. Do a little research on this and see if you don't agree. Thunderous, crashing waves, and serene hiking trails among the elk await you! I can smell the eucalyptus as we rode with the window down letting the cool air wash through the car......

mmmmmmm olive oil. This is good information. Try their Italian Bread with Tomatoes and Olive Oil recipe on their site. I bought a wonderful Chipotle olive oil at the new Olive Oil Shop in Fredericksburg, TX. Went in and did "tastings" just like at a winery. They also have a very unique group of balsamic vinegars to taste. I bought a "fig" balsamic. It is all good and hard to choose. Look them up. There are four locations in the US and the newest one is in FBG!

If you ever go to the Napa Valley put this on your bucket list. Be sure to make reservations well in advance. Spend time just soaking it all in.
