RSVP to Lunch on The Prairie

Well, I made it!!!  And better yet my sister and my niece, Binky and Kate, were accepted, too.  This is going to be one exciting trip.  The luncheon will have 35 of us with Rachel Ashwell at her new B&B.  You can preview it on http://theprairiebyrachelashwell.com/   It is so beautiful.  After the luncheon and tour then that evening we get to go shop her new Shabby Chic Couture Shop.  Going to be quite an adventure.  Will keep you posted as we get ready to take this trip.  We then come back and blog the event.  Winners get great prizes from The Pie Man, Bud Royer!  Those of you who have been to Round Top know all about Royer's Cafe.  Let me know if there's anything you want me to try and find for you while we are there.

Here’s your opportunity to meet and have lunch with Rachel Ashwellat her amazing new Bed and Breakfast, The Prairie by Rachel Ashwell, in Round Top, Texas.  OMG.  What an opportunity.  I have sent in my RSVP as fast as I could.  Everyone pray and cross your fingers that I could receive this opportunity.  My sister, Binky, and I did this show together once, but I did it many times by myself.  We had just made plans yesterday to go this year.  We also talked about Rachel Ashwell's new B&B in Roundtop, as I have one in Fredericksburg.  I will keep you posted.

Summertime Food

It's nice to lighten up and enjoy what's fresh.  However, I have a staple at the Lazy T that is good anytime of the year.  So I am going to share my favorite granola recipe.  It is so easy to make and change to suit your taste or allergies.  It makes a good snack, too.

Makes 6 1/2 cups, serves 12 (not at my table)

3 c. old-fashioned oats
1 c. slivered almonds
1/2 c. coconut
1/3 c. honey
1/4 c. canola oil
1 c. dried cranberries
1.2 c. dried banana chips

Preheat oven to 325 degrees

Stir together oats, almonds, coconut, honey and oil in a large bowl.

Spreak in a rimmed baking pan and bake until oats are golden (about 30 minutes).  Stir often to prevent sticking.

Remove from oven, let cool, then stir in cranberries and banana chips.  Store in airtight container after completely cooled.

Substitute the fruit or nuts to taste or for variety.
